Boy have I been at it lately in the kitchen... my cooking expeditions have lead to me to wonder if should be worrying about my waistline more, but I just can't help myself! A couple of great dishes I made in the last couple of weeks were chicken pot pies and homemade sweet potato gnocchi with spinach and mushrooms.
Chicken Pot Pie!
|Brown your chicken in a pan|
|Add veggies, and cook for several minutes|
Then add your flour and chicken broth and cook and stir
several more minutes
|Using individual casserole dishes, spoon filling in.|
|Cover with puff pastry and brush with an egg wash|
|Pop them in a 425 oven until golden brown and enjoy!|
Sweet Potato Gnocchi with Spinach & Mushrooms
|Home eggless gnocchi's are lift and airy!|
|Boil them in water|
|Make your spinach and mushroom sauce|
|Sprinkle with parmesan and serve! YUM!|
