Quick Fix: Blueberry Lemonade Popsicles

It has been hot, has it not? Our air conditioner system decided to up and quit on us a few weeks ago, so while we are waiting to be reinstalled, I have been looking for ways to beat the heat. One day I woke up and it was so hot that I wanted was a popsicle; it's not every day that happens!

Of course, I am not about to go buying popsicles when I can make them, though! So I came up with this incredibly quick fix that you can pop in the freezer the night before and enjoy on a hot day, or put them in before you go to work and enjoy them for dessert, like we did! With temperatures breaking a whopping 100 degrees this weekend, you are probably going to welcome these pops into your life.

And, no, in case you were wondering, you don't need those popsicles maker molds. If have them though, it wouldn't hurt. (But this recipe would probably make 6 or 8 of those smaller pops).

Blueberries are in season and I bought a ton of them. Wash them good for this recipe! 

No fancy ice pop makers? No worries! 
Just use the small version of the red plastic cups. Paper cups would work just as well. 

Simply Lemonade is really yummy and freezes great! You can use any variety of lemonade you want, of course, this is just my suggestion. 

Distribute among the cups evenly. 

Add popsicle sticks. 
Obviously, I could not get mine to stand at attention... I suppose I could have added them later in the freezing process, but really, I can't hover like that. I call this "rustic."

TA DA! Finished [rustic] ice pop! YUM! It was goooooood and just the thing to cool down with! 

Blueberry Lemonade Popsicles 

Time: 5 minutes + freeze time | Serves 4 | Difficulty: Easy-freezy 

You Will Need:

1 cup of blueberries 
2 cups lemonade 
4 small plastic cups
4 popsicle sticks 


Place blueberries in a cups, distributing evenly. 

Pour 1/2 cup lemonade into each cup. 

Place popsicle sticks in cups. 

Place in freezer until they are fully frozen (generally about 4 or 5 hours). 

Remove from cups and use the cups to catch the melty bits! YUM!
